Fall is here which means, Blogtober! If you’re new here, my blog normally is not so ~spooky~ looking! With the fall solstice making it’s debut last week, and October starting today, I’m here to dedicate this post, and all the following posts this season, to fall; my 2nd favorite season (spring is my favorite ❤)! Let’s Fall in…

Lighting my pumpkin patch candle and snuggling in with a hot cup of coffee to write this. I LOVE this time of year, too bad Texas won’t act like it’s fall for another month or so. We basically have two seasons; winter and summer, but it’s fine… Anyway, I am still embracing fall in this 90-degree weather! As I get more involved in blogging and noticing life around me, I’ve noticed myself catching such a deeper appreciation of my surroundings. The beginnings of fall on campus at Texas A&M are SO beautiful and I’m so lucky to be here for it. The leaves are changing and falling, there’s a brisk breeze in the mornings that is fleeting with sunrise, and there is most certainly pumpkin spice luring me to Starbucks!

Baking Recipes

Some of my absolute all-time favorite things to bake fit under the fall season category! This would be a great addition to a Friends-giving! I’m going to put a couple of my go-to’s for dinner party’s or baked gifts! Who doesn’t love a good sweet fall staple?!

  • Pumpkin Bars

Okay, literally these are my favorite. Nothing else matters on this post except these pumpkin bars. Seriously. I have made these on multiple different occasions and they are always the favorite dessert! The recipe and process is so simple it’s very beginner level!

Ingredients
  • 4 eggs
  • 1 Cup Vegetable Oil
  • 2 Cups Sugar
  • 15 oz. Real Pumpkin (Libby’s)
  • 2 Cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 2 teaspoons Cinnamon
  • 2 teaspoons Ginger
  • 1/2 teaspoon Cloves
  • 1/2 teaspoon Nutmeg
Steps
  1. Turn the oven to 350.
  2. Mix in a large bowl; eggs, oil, sugar, pumpkin
  3. Sift dry ingredients together; flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, nutmeg.
  4. Slowly pour and whisk dry mix into the wet mix.
  5. Grease a 12in. x 18in. x 1in. pan.
  6. Pour batter into the pan and bake for 35-25 minutes.

I love to top my pumpkin bars with icing. I have a recipe for icing below, but when I’m crunched for time or just don’t feel like making it, my go-to icing is Duncan Hines Whipped White Frosting!

Ingredients
  • 6 oz. Cream Cheese
  • 3/4 Stick of Butter
  • 1 Tablespoon Cream or Milk
  • 1 teaspoon Vanilla
  • 4 Cups Powder Sugar
Steps
  1. Soften butter.
  2. Mix ingredients together, wet first, then slowly adding sugar!
  • Snickerdoodles

Everyone loves a good cinnamon & sugar cookie. At least, everyone should. Chocolate chip cookies are a good basic one, but this is fall food, and cinnamon is HIGHLY encouraged!

*Yields 6 Dozen Cookies*
Ingredients
  • 1/2 Cup Butter/Margarine; Softened
  • 1/2 Cup Shortening
  • 1 1/2 Cup Sugar
  • 2 Eggs
  • 2 3/4 Cups Flour
  • 2 teaspoons cream of Tartar
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon salt
  • 2 Tablespoons Sugar
  • 2 teaspoons Cinnamon
Steps
  1. Turn the oven to 400.
  2. Mix thoroughly butter, shortening, 1 1/2 cups sugar, and the eggs. Blend in flour, cream of tartar, baking soda, and salt. Shape the dough by rounded teaspoons into balls.
  3. Mix 2 tablespoons of sugar and the cinnamon and roll the balls into the C&S mixture. Place balls 2 inches apart on an ungreased baking sheet. Bake 8-10 minutes or until set.
  4. Immediately remove from the baking sheet.
  5. Enjoy! 🍪💛

Movies!!

Not your typical but sorta your typical movie night list. ; ) These are some of my favorites movies for this time of year that I could think of! I will surely be referring to my post when picking out movies for nights in with friends! : ) I have provided links under the name so that it’s an easy one-stop-shop for finding the movies! Unfortunately, not all of them are free to stream, but I tried y’all.
